We first make food delicious, then we make it beautiful; beautiful may mean fanciful, artsy, trendy, or exotic, but it may also mean traditional, simple, or rustic We use real ingredients and authentic production methods to create great food. Enjoying great food is living well, sharing great food is living better than well. We create great food from great ingredients, which means that some products must be rare and that not all products can be available at all times - some products must be seasonal. Creating great food is as enjoyable as eating great food. When we understand how and why we prepare food in a particular way, the food has meaning as well as nutritional and aesthetic values, and is therefore more enjoyable. We base the creation of great food in tradition and innovation, allowing compromises, efficiencies, and adaptations during production, but only to a point, after that point we negate the spirit of the food or ingredients. We enjoy great food not through taste alone, but through the engagement of multiple senses. Great food is available in all price ranges, though some ingredients, production methods and presentation methods are not.
